University of Illinois Extension is bringing fresh flavors and nutrition education to the Champaign Farmers Market with a new food demonstration series beginning Tuesday, June 24.
The demonstrations will highlight seasonal produce, healthy recipes, and practical cooking tips. Extension staff will be at the market every other week throughout the season, showcasing recipes that make the most of fresh, locally grown ingredients.
The first demonstration coincides with National Pollinator Week and will feature a refreshing Cucumber Strawberry Salsa recipe. The recipe highlights ingredients that depend on pollinators, helping participants learn about the important role bees, butterflies, and other pollinators play in producing many of the fruits and vegetables we enjoy.
Community members will have the opportunity to sample the recipe thanks to a partnership with Big Grove Tavern, which will prepare and serve tasting samples at the market. In celebration of Pollinator Week, Big Grove Tavern will also feature the Cucumber Strawberry Salsa as a special menu item.
“We are excited to connect with market visitors through recipes that are both delicious and educational,” said Extension Educator Rachel Mannen. “Food demonstrations are a great way to inspire people to try new ingredients while learning more about where their food comes from.”
