Feeding a crowd this weekend? Got unexpected guests? Looking for a super-fast recipe that will fill up a tableful of bellies?
Problem, meet solution: Spaghetti Salad. This simple and tasty pasta dish has been a staple in my family for more than 20 years. Been to a Hatch family barbecue/graduation party/summer picnic any time between 1985 and now? You’ve had Spaghetti Salad!
We had an extra six people stop by on Sunday out of the blue, and this dish fit the bill. If you’re having a get-together for the holiday, your guests will rave about it. So without further ado:
Spaghetti Salad
Ingredients
1-pound box of spaghetti
1 bottle of Viva Italian Salad Dressing
1 bottle McCormick Salad Supreme Seasoning
1 red onion
1 red pepper
1 yellow pepper
1 orange pepper
1 cucumber
1-2 tomatoes
Directions
Cook pasta until al dente, drain and rinse with cold water. Mince veggies and tomatoes. Toss veggies and pasta with seasoning and salad dressing. Chill for one hour. Can be made ahead the night before.
Enjoy!
